Alles wat je lekker vindt aan een enchilada, maar dan in een kom! We beginnen met een kruidige koriandersaus gemengd door luchtige quinoa en het eiwitrijke oergraan kamut. Onze pittige ancho-chipotlesaus wordt perfect gaar gestoofd en gemengd met tempeh-kruimels. We garneren de kom met ingelegde kool en ui, zwarte bonen, maïs en onze 'guacamole', gemaakt van verse erwten.
