The lemon-roasted almonds on top are such a smart touch—they add a bright crunch that cuts through the rich, spiced potato tikka masala. I heated mine up for lunch and the beluga lentils held their texture perfectly, making the whole bowl feel hearty without being heavy.
The okra still had a little snap to it even after reheating, which surprised me, and the lentils soaked up that tikka masala sauce beautifully. Portion felt generous for a bowl and the almonds added just enough brightness to cut through the spice.
